Roasted Broccoli with Soy Sauce

Serves 4 | Prep Time: 10 minutes | Total time: 30 minutes


Ingredients

1 pound broccoli

4 TB olive oil

1 TB soy sauce

1 tsp salt


Method

  1. Preheat the oven to 450° F. .Place parchment paper on a sheet pan.

  2. Wash and dry broccoli, and then cut the florets into bite-sized pieces. Peel the stems and cut into ¼ inch pieces.

  3. Mix the olive oil with the salt and soy sauce. Whisk to make an emulsion, then toss the broccoli in the sauce.

  4. When the oven comes to temperature, scatter the vegetables around the sheet pan, leaving as much space as possible, and putting the flat side of everything down.

  5. Place in oven and allow to roast for 10 minutes. Stir around the vegetables, flipping where possible, and put back in to roast for 5-10 more minutes, or until fork-tender.
