Pasta with Sauteed Mushrooms

Serves 4 | Prep Time: 10 minutes | Total time: 30 minutes


Ingredients

8-oz rotini, or your favorite pasta shape

1 TB olive oil

3 TB butter, divided

16 oz mushrooms, sliced

1/2 tsp salt

1/2 cup white wine

1 garlic clove, minced

1/4 tsp dried thyme

Parmesan cheese, grated


Method

  1. Slice the mushrooms, and mince the garlic

  2. Put 3 cups of water and ½ tsp salt in a large pot and bring to a boil. Cook pasta according to package directions. Reserve 1/4 cup of pasta water and drain.

  3. While the water is coming to a boil, place a large skillet over medium-high heat, and add butter and oil. When the butter sizzles, add the mushrooms and saute for about 4 minutes, until they are golden Add wine and cook for about 1 minute..

  4. Add salt, thyme, and garlic, and saute for 1 minute. Add the pasta, and reserved pasta water and toss. Serve hot with parmesan cheese at the table.
