Butter Baked Salmon

Serves 4 | Prep Time: 5 minutes | Total time: 15 minutes

Ingredients

1 ½ pounds boneless skin-on salmon filets

4 TB butter

Lemon, cut into slices or wedges


Method

  1. Preheat oven to 475F.

  2. Place the butter in a baking dish to fit your filets. Place the pan in the oven for about 5 minutes, or until the butter is melted.

  3. Put the salmon in the pan, skin side up and bake for about 5 minutes. Remove the skin and turn the filets over. (If the skin doesn’t come right off, cook for 2 more minutes.) Cook for another 3-5 minutes, until done. Serve with lemon wedges or slices.


Variations:

  • Use olive oil instead of butter

  • Add minced fresh herbs: Bittman suggests parsley, chervil or dill with butter; thyme, basil or marjoram with olive oil; or cilantro or mint with peanut oil.

  • Add lemon juice and/or pressed garlic to the butter or oil.
