Sauteed Squash Cubes

Serves 4-6 | Prep Time: 15 minutes | Total time: 30 minutes


Ingredients

2 lb butternut squash

2-4 TB butter

1-2 tsp sugar (optional)

Salt and pepper


Method

  1. Peel and seed the squash and cut into 1/2-inch cubes.

  2. Melt 2 TB of butter in a large skillet. Stir in the sugar (if using).

  3. Turn heat to medium high and add the squash cubes, arranging them in one layer. Brown squash on all sides, (about 10 minutes).

  4. Add remaining butter and turn heat to low. Cover and cook until just tender, 5 minutes or less.

  5. Salt and pepper to taste. Serve hot.
