Cold Family Sub

Serves 4 | Prep Time: 15 minutes | Total time: 25 minutes


Ingredients

1 small red onion

1 cup water

1 TB baking soda

1 loaf French bread

1/3 cup Italian salad dressing

1⁄4 lb thin-sliced ham

1⁄4 lb. thin-sliced salami

1⁄4 lb. thin-sliced “sandwich pepperoni” (available at a deli)

1⁄4 lb. thin-sliced mozzarella or provolone cheese

Toppings:

Cucumber, thinly sliced

Sliced black olives

Banana peppers or any pepper you like


Method

  1. (Optional) To reduce the bite of the raw onion, thinly slice red onion and place in a bowl with 1 cup of water and 1 TB of baking soda for at least 15 minutes.

  2. Shred lettuce. Slice cucumber, Slice French bread lengthwise.

  3. Brush the inside of each half of loaf with salad dressing.

  4. Layer meats and cheese on bottom half of the loaf, placing onions on the top.

  5. Add lettuce, cucumber, olives, and any desired condiments.

  6. Place top onto loaf. Cut into 3-inch slices and serve.


Variation: Add any toppings your family likes.
