Steamed Broccoli with Bacon and Browned Breadcrumbs
Serves 4 | Prep Time: 10 minutes | Total time: 20 minutes
Ingredients
1 piece of bread
1 slice of bacon
1 pound broccoli
1 TB butter
Method
Buzz bread in food processor to make small crumbs.
Cook bacon in pan until crispy. Remove to a plate covered with paper towels and reserve the bacon grease.
Wash broccoli. Cut the stalk from the top and remove tough stalk end. Peel stalk and chop into 1/2-inch sections. Separate florets into cut into pieces about the same size, so they will cook in the same time. Mince garlic.
In a large pot bring 1 inch of water to boil.
Place broccoli into the steamer basket and place over the boiling water. Cover. Steam to your preferred tenderness, testing with a fork–about 5-6 minutes for tender-crisp, 8 minutes or longer if you prefer soft vegetables.
Whole the broccoli is cooking, crumble the bacon.
Warm the bacon grease over medium-high heat. Add the bread crumbs and stir until they are browned. Place in bowl with crumbled bacon.
Melt butter in microwave.
Place broccoli in a serving bowl and toss with butter until evenly coated. Toss with the bacon-bread crumb mixture.
