Steamed Broccoli with Pine Nuts

Serves 4 | Prep Time: 10 minutes | Total time: 20 minutes


Ingredients

1/4 cup pine nuts

1 pound broccoli

4 TB butter


Method

  1. If pine nuts are untoasted, place them in a dry skillet over medium heat and stir until they are golden brown, about 3 minutes. (Keep an eye on them: they quickly go from golden to burnt.) Pour into a small bowl to prevent them from burning in the hot pan.

  2. Wash broccoli. Cut the stalk from the top and remove tough stalk end. Peel stalk and chop into 1/2-inch sections. Separate florets into cut into pieces about the same size, so they will cook in the same time. Mince garlic.

  3. In a large pot bring 1 inch of water to boil.

  4. Place broccoli into the steamer basket and place over the boiling water. Cover. Steam to your preferred tenderness, testing with a fork–about 5-6 minutes for tender-crisp, 8 minutes or longer if you prefer soft vegetables.

  5. Meanwhile, melt butter. If desired, allow the butter to brown a bit.

  6. Place broccoli in a serving bowl and drizzle with the melted butter. Toss to distribute evenly. Spinkle pine nuts over the top. Serve warm.
