Steamed Broccoli with Butter and Panko
Serves 4 | Prep Time: 10 minutes | Total time: 20 minutes
Ingredients
1 pound broccoli
4 TB salted butter
1/4 cup dried bread crumbs
Method
Wash broccoli. Cut the stalk from the top and remove tough stalk end. Peel stalk and chop into 1/2-inch sections. Separate florets into pieces about the same size, so they will cook in the same time. Mince garlic. Cut the butter into evenly sized pieces.
In a large pot bring 1 inch of water to boil.
Put broccoli into the steamer basket and place over the boiling water. Cover. Steam to your preferred tenderness, testing with a fork: about 5-6 minutes for tender-crisp, 8 minutes or longer if you prefer soft vegetables.
Meanwhile, heat butter in a skillet over medium-high heat. When it melts, turn heat to medium, and continue to cook until it foams. Once the foaming subsides, take off heat.
Place broccoli in the serving bowl and pour the butter over. Toss to coat. Serve hot, sprinkled with bread crumbs.
Variations:
Add minced garlic after the butter melts and saute until translucent.
Add 2 TB lemon juice and 1/2 tsp grated lemon zest after the butter melts and whisk before drizzling over the broccoli.
