Steamed Broccoli with Browned Butter and Garlic

Serves 4 | Prep Time: 10 minutes | Total time: 20 minutes


Ingredients

1 pound broccoli

2 cloves of garlic

4 TB butter


Method

  1. Wash broccoli. Cut the stalk from the top and remove tough stalk end. Peel stalk and chop into 1/2-inch sections. Separate florets into pieces about the same size, so they will cook in the same time. Mince garlic. Cut the butter into evenly sized pieces.

  2. In a large pot bring 1 inch of water to boil.

  3. Put broccoli into the steamer basket and place over the boiling water. Cover. Steam to your preferred tenderness, testing with a fork: about 5-6 minutes for tender-crisp, 8 minutes or longer if you prefer soft vegetables.

  4. Meanwhile, heat butter in a skillet over medium-high heat. When it melts, turn heat to medium, and continue to cook until it foams. Continue to simmer until you begin to see brown flecks, about 3 minutes. Add minced garlic and continue to simmer until the garlic is translucent. Do not allow the butter to burn. Remove immediately into a serving bowl.

  5. Place broccoli in the serving bowl and toss to coat with the butter. Serve hot.
