Hummus

Serves 4 | Prep Time: 10 minutes | Total time: 40 minutes (mostly waiting)

Note: Imminently configurable, when you make your own hummus it can be as garlicky, lemony, or as anything else-y as you like.


Ingredients

1 - 15-oz can chickpeas

2 TB lemon juice (or to taste)

1 cloves of garlic (or to taste), pressed or minced

1/2 tsp salt

3 TB tahini

2 TB extra virgin olive oil


Method

  • Place chickpeas into a food processor and process until they are completely broken down.

  • Add the lemon juice, garlic and salt, and process until they are well mixed in.

  • Add the tahini and process until the hummus is well mixed.

  • Let sit for 30 minutes so the flavors can meld. Taste, and add lemon juice 1 TB at a time, to your taste.

  • Serve on individual plates, and drizzle olive oil on each serving. Eat with raw vegetables and pita bread.


Variations:

  • For standard hummus, use 2 TB of lemon juice

  • For somewhat lemony hummus, use 3 TB of lemon juice

  • For very lemony hummus, use 1⁄4 cup of lemon juice (1-2 lemons)
