Foil Packet Salmon
Serves 4 | Prep Time: 10 minutes | Total time: 30 minutes
Ingredients
1 lb boneless salmon
Salt
4 tsp butter, melted
2 lemons
Minced garlic
Fresh rosemary or dill (optional)
Method
Preheat the oven to 425° F. Zest and juice one lemon. Thinly slice other lemon. Mince garlic. Melt butter.
Mix the lemon juice, zest, and garlic into the butter.
Use paper towels to pat the salmon dry. Lay the fillet, skin side down, in the center of a large piece of foil. Brush with butter sauce, and sprinkle with salt.
(Optional) Arrange fresh rosemary sprigs or dill fronds on each piece.
Place lemon slices on the salmon.
Bring the long edges of the foil together and fold down halfway. Fold again and then fold flat against the top of the packet. Fold the end pieces similarly, making sure the packet is tight.
Place on a baking sheet. When the oven is hot, place the baking sheet in the oven and bake for 15 minutes, until it reaches an internal temperature of 145°. The fish should flake easily with a fork.
Remove from the oven. Unwrap and serve.
