State Fair Style Plant-based Sausage Sandwich

Serves 4 | Prep Time: 5 minutes | Total time: 20 minutes


Ingredients

4 plant based Italian “sausages”

1 medium onion

1 green pepper

1 TB olive oil

4 large hot dog buns


Method

  1. Start broiler to heat. Cover a cookie sheet with foil for easy clean-up.

  2. Place “sausages” on one end of the cookie sheet and place under your oven’s broiler. Set a timer for 4 minutes.

  3. Meanwhile, slice one medium yellow onion and core and slice 1 green pepper, then toss them with oil.

  4. After 4 minutes, pull the cookie sheet, turn the “sausages,” and scatter the vegetables at the other end of the cookie sheet. Return to oven and set another 4 minute timer.

  5. When time rings, turn the “sausage” again and stir the vegetables. Return to the oven again for another 4 minutes of cooking, or until "sausages” reach 165 degrees. Watch vegetables so they don’t burn, (they should have bits of charring at the edges), and remove them early if needed.

  6. Allow “sausage” to sit for a few minutes to let the temperature come down a bit before serving.

  7. Place in buns. Serve hot.


Variation: Serve without buns as a main course.
