Steamed Broccoli with Garlic and White Wine
Serves 4 | Prep Time: 10 minutes | Total time: 20 minutes
Ingredients
1 pounds broccoli
1 clove of garlic
3 TB olive oil
1 cup dry white wine
Method
Wash broccoli. Cut the stalk from the top and remove tough stalk end. Peel stalk and chop into 1/2-inch sections. Separate florets into pieces about the same size, so they will cook in the same time. Mince garlic.
Heat olive oil in a skillet over medium-high heat. Add garlic and saute for 30 seconds. Add white wine and raise the heat to boil rapidly, until it has reduced to about 1/2 a cup. Set aside.
In a large pot bring 1 inch of water to boil.
Put broccoli into the steamer basket and place over the boiling water. Cover. Steam to your preferred tenderness, testing with a fork: about 5-6 minutes for tender-crisp, 8 minutes or longer if you prefer soft vegetables.
Place broccoli in a serving bowl and pour the wine reduction over it. Toss. Serve hot.
