Steamed Broccoli with Lemon Butter Sauce

Serves 4 | Prep Time: 10 minutes | Total time: 20 minutes


Ingredients

1 pounds broccoli

4 TB butter

2 TB lemon juice

1/2 tsp grated lemon zest


Method

  1. Wash broccoli. Cut the stalk from the top and remove tough stalk end. Peel stalk and chop into 1/2-inch sections. Separate florets into cut into pieces about the same size, so they will cook in the same time.

  2. Melt butter in a skillet. Whisk in lemon juice until it makes an emulsion. stir in the lemon zest and set aside.

  3. In a large pot bring 1 inch of water to boil.

  4. Place broccoli into the steamer basket and place over the boiling water. Cover. Steam to your preferred tenderness, testing with a fork–about 5-6 minutes for tender-crisp, 8 minutes or longer if you prefer soft vegetables.

  5. Place broccoli in a serving bowl and toss in the lemon butter sauce. Serve hot.
