Blanched Brussels Sprouts with Bacon

Serves 4 | Prep Time: 15 minutes | Total time: 20 minutes

Note: You may steam the brussels sprouts if you prefer.


Ingredients

3/4 pound brussels sprouts

1/4 pound bacon

Salt


Method

  1. Trim, wash, and dry the brussels sprouts. Cut in half.

  2. In a skillet, cook bacon until crisp. Remove from pan, reserving the bacon fat. When cool, crumble into bacon bits.

  3. Bring a well salted pot of water to a boil. Add brussels sprouts and cook until just tender (4 to 8 minutes, depending on the size of the sprouts). Drain and quickly cover with cold water (to preserve the color).

  4. Warm the 2 TB of bacon fat and warm the brussels sprouts. Add a bit more bacon fat if desired.

  5. Add the bacon bits and toss to distribute. Add salt and pepper to taste. Serve hot.
