Spinach Stir-Fried with Ginger

Serves 4 | Prep Time: 10 minutes | Total time: 20 minutes


Ingredients

2 pounds fresh spinach

1/2-inch fresh ginger

3 TB peanut oil

Salt

1 TB Shao-xing wine or dry sherry

1 1/2 TB soy sauce

1 tsp brown sugar


Method

  1. Wash and dry the spinach. Trim stems. Cut leaves into strips. Grate ginger. Mix wine, soy sauce, and brown sugar in a small dish.

  2. Heat peanut oil in a wok or wide saute pan over high heat. Add ginger and stir-fry for one minute. Add spinach and stir-fry for 3 minutes.

  3. Turn the heat to medium and add wine mixture. Cover and cook for 3 minutes. Serve immediately.


Variation:

  • Add 1 clove of garlic, minced or pressed, with the ginger

  • Add 1/2 pound sliced mushrooms with the spinach.
